Making Mini Pancakes and muffins

 Making these cute little things this Valentine's Day!! Sophia helped (she is quite the whisker).  I bought a killer Pancake Mix from Trader Joes a while back and it really tastes good.  Plus, that pancake recipe on the back just calls for water and one egg.  So simple! 

Pour the Pancake mix into mini-cupcake pan and add any toppings you have on hand.  Sophia picked chocolate chips, cinnamon sugar, blueberries, and plain with syrup.  At our house I buy the Agave syrup from Costco and it works.  Bake at 375 degrees for 12 minutes.  (when I follow a recipes I always turn down the heat by ten degrees and check in reduced time with toothpick)


We served them up along side fully cooked (so we microwave) bacon, and scrambled eggs.  There's Sophia in her jammies helping me the whole time!  She also set the table and served water for the kids as well as got them napkins.  Child labor at it's finest :)


Ingredients:
1 and 3/4 cups -Pancake Mix
1- Egg
1 cup water




Recipe:

Preheat oven to 375 degrees. Whisk together all ingredients in a large mixing bowl. I then pour into a measuring cup for easy spout. We poured them the first time about 3/4 full and they ended up like mini muffins. This morning we poured less mix and water and poured them only 1/2 (or even less) so the ended up more like pancakes. Once all the cups are full, we added toppings on top. Bake at 375 for 12 minutes and then check doneness with a toothpick.  If it comes out clean that means they are done.  Let them cool for 2 minutes.  Total time was 15 minutes.
