The easiest thing to make for a daily meal substitute or snack is a smoothie. Granted, I never made them up until 2 years ago when my fiancé' Sumit purchased a VITAMIX from Costco (against my wishes). Now I use it almost every day and have definitely gotten more than our money's worth. It was always hard getting my family to "eat" their veggies now they have the option to eat them or drink them. Fruits and Veggies are always up for grabs at anytime. I will never turn down a banana right before dinner.
Now, these smoothies are completely customizable depending on what you have on hand. I usually just use water at the bottom, greek yogurt, and produce: carrots, apple, broccoli, celery, cucumber, spinach, bananas, and oranges. Frozen berries of any kind are added next..
Here's all you need! I know it looks like a ton of stuff, but the whole process takes maybe 10 minutes and that is including clean up. Instant homemade vitamins!
Ingredients: All Washed
2 whole carrots
1 cup broccoli
half of cucumber
2 celery stalks
2 cups (loose packed) spinach(pre-wash is OK)
Apple-cut in large chunks
2 Bananas
2 small oranges (one large)
5 tblsp Greek Yogurt (we like it for the probiotics-can put less)
2 cups water
Juice of half a lemon
1-2 cups frozen berries
Recipe:
Add Water, greek yogurt, and lemon juice to bottom of blender. Then everything else goes in and the VITAMIX has a very nice "Smoothie" feature and you flip on and walk away when done. I usually put these lined up in glasses with lids in the fridge. If there's no room for all that in the fridge I use a "Kool-Aid" type pitcher and people can just pour from there.
So easy and I hope you can incorporate into your lives in a way that works! We drink these for the health benefits so we put aside everything else and just drink it down quickly!
