I always think about photographing my food after it has already been devoured by the family! So there are no pictures of these beautiful creations... Sorry about that! I will tell you to customize these for whatever you like. My honey wished they were slightly thinner and cooked for longer time on lower heat. It is whatever floats your boat! I did however love them and say I just may never buy tortillas from the store again!
Now this is a modified version of what my Grandmasita's taste like. Her recipe is in her head so she goes by how the dough feels vs. exact measuring, all this takes time to achieve. But you learn each time you make them.
Here's the ingredients!
-3 cups flour
-1 tsp. salt
-1/3 cup vegetable shortening (about 5 Tablespoons)
-1 cup warm water
Combine all the flour, and shortening with your fingers until large clumps are gone and is completely incorporated. Dissolve the salt in warm water and add to dry ingredients until they are covered. I do this with a fork and sometimes do not add all the water. Once you can scoop the dough out and flour your workstation, begin to knead the dough until smooth (around 30-40 times). Divide the dough into 12 small balls, and place on a plate so they can rest. Cover with plastic wrap and wait at least 30 minutes. Once that is complete, Preheat your seasoned flat griddle * you want it nice and HOT* so about Medium to Medium High heat. Each stove is different and this takes time to master depending on how you like them. Now you can begin to roll out the tortillas (as I mentioned I WILL roll them thinner next time), they should be at least 7 inch circles. Put the dough on a flat pan on the stove and let the sides cook until there are little brown specks on both sides like you would see on other tortillas. Each side may only cook for less than a minute, and when you feel they are done, place in a bowl that is lined with a cloth of some kind to keep them warm. Continue rolling and cooking until you have a full dozen!
We added ground turkey filling with Romaine, Tomato, cheese, salsa and greek yogurt for sour cream. They didn't last long and were also enjoyed with just plain cheese. I can't make them quite like my Grandma, but maybe with some more practice, I'll be making them for her one day!
