Recipe Tonight: Shredded Chicken Minestrone Served Over Yummy Organic Brown Rice


(made from last night, I usually cook at least 1 & 1/2

to 2 cups of any rice at a time to reserve for later.) Also I must say that brown rice, from my first blog, was a hit with Sumit and Mikai not to mention full of heart healthy vitamins, minerals, proteins and fatty acids that keep them fuller, longer.


Ingredients:


Organic Brown Rice (leftover from last night)


1 can Minestrone Soup (mine's from Costco)


1 can shredded chicken (Costco)


healthy tbs Olive Oil and slab of butter

garlic, salt, pepper, Tabasco


Monday night.... we meet again. It's a really busy day all the way around and I have just officially sat down to eat. Thought I'd share this quickly!


First I:

Start with my oil and butter in a small saucepan. Slowly simmering I start to build flavors with Garlic, Salt, Pepper, Tabasco. This can be cooked for a long while just bubbling away before adding the can of soup. Start slowly and add seasoning along the way if necessary. I add whatever is on hand at any given time so be creative! Just add chicken for about 20-30 minutes, everything is fully cooked and is ready after heated through but I always like it pipin' hot :o)


Meanwhile I:

Am starting my blog, watching Mikai pack his lunch (what a great kid), pack my lunch and clean up kitchen/living room/sign off homework. I swear I don't know how people do it with more than 1 child... but I'm taking time to realize just how fortunate I am and give a little Amen to the man upstairs. (back to dinner 25 minutes later....)


Then I:

Just zap some brown rice and melt shredded cheese, just before serving your Shredded Chicken Minestrone over top of rice... dallop of sour cream and it's done!!
